Kaddu kheer (Bottle gourd kheer dessert Recipe)

- Bottle gourd-1/2
- Condensed milk -1tin(400grams)
- Fresh Milk - 2cups
- Sugar-1cup
- Almonds-chopped-1tablespoon.
- Pistachios-1 tablespoon
- Melon seeds-1 tablespoon
- Chironji seeds (BUCHANANIA IANZAN)-1 tablespoon.
- Dates(khajoor)
- Vanilla essence

Clean rice and wash with water thoroughly,and soak in water for 10 minutes.

Grind Basmati rice with half cup of water,boil fresh milk and add the rice paste,cook it a low fire,mixing it every 5 seconds about 2 to 3 minutes,check that it should not form lumps.

I took half of the kaddu as shown in picture,peel the skin and grate it.

Remove nuts from ghee and keep a side,and fry kaddu in the remaining ghee,until water evaporates from kaddu and raw smell goes.(do not burn kaddu).

While kaddu is frying ,add condensed milk to rice mixture.

Take one cup of sugar and add to the fried kaddu,let the sugar melt.

Now add Kaddu mix to rice mixture,Let it cook for approximately one minute,take it into serving bowl,add chopped almonds and serve hot or cold.
