Brinjal coriander stir fry
A simple brinjal curry ,with fresh coriander.

Ingredients:
10 small brinjal(300 grams)4 to 5 green chillies.
1 teaspoon chopped garlic
1 teaspoon chopped ginger
2 tablespoons sliced onions
1/2 cup fresh grated coconut.
1/2 teaspoon cumin
1 bunch of fresh coriander
For tempering:
1 tablespoon Bengal gram(chana dal)
1/4 teaspoon mustard seeds.
1/4 teaspoon cumin
2 dry red chillies
1/4 teaspoon turmeric
1/2 teaspoon salt.
1 tablespoon oil for cooking
Preparation:
Make rough paste of fresh grated coconut,coriander,ginger,garlic,green chillies,cumin,salt
Slice brinjal and soak them in salt water.
Heat oil in a pan,add the tempering ingredients,when they start spluttering,add onions,curry leaves saute till they change colour,add turmeric powder.Remove brinjal from water,add to onions,mix well,cook for two to three minutes.
Add coriander and coconut paste,mix well
Cook on very slow flame,until brinjal is soft and done.
Serve with chapati or white boiled rice.
