Mutton methi curry/Lamb curry with fenugreek leaves |
Ingredients:
Lamb meat-500 grams.
Onions-1 and 1/2 cups or 2 medium.
Tomatoes -3.(cut finely)
Fresh methi(fenugreek leaves)-1 and 1/2 cups.
Spices:
Cinnamon stick-1
Cloves-3.
Cardamom-2
Shahjeera(caraway)-1/2 teaspoon.
Coriander powder-1/2 tablespoon.
Garam masala powder-1 teaspoon.
Salt to taste.
Canola oil 1 tablespoon for cooking.
To marinate lamb meat:
Marinate meat and leave it for 15 to20 minutes before cooking.
Salt-1teaspoon.
Turmeric -1/2 teaspoon.
Chilly powder-1 and 1/2 teaspoons.
Preparation:
Heat oil in pan,add dry spices,and onions.
Saute till onions are lightly browned.
Add finely cut methi leaves,fry till they loose moisture.
Add finely cut tomatoes,cook for two minutes.
Now add the marinated lamb meat,mix well, cover it and cook for 10 minutes.
Remove cover and cook for another 5 minutes open,when the curry is dry,add 1 cup of water
And cover it and cook for 20 to 25 minutes or until meat is soft and cooked.
Now add gram masala and coriander powder,mix it.Remove from flame and transfer into serving bowl,dress with finely chopped fresh coriander leaves.
Serve hot.Curry
