Thotakura vepudu/Amaranthus fry
Garlic cloves -6 to 8.
Onions-1.
Green chillies-4(according to taste)
Mustard seeds-1/2 seeds.
Cumin-1/2 teaspoon.
Curry leaves-10 leaves.
Turmeric-1/2 teaspoon.
Coriander powder-1/2 teaspoon.
Salt-1/4 teaspoon.
Canola oil for frying.
Make tempering oil,mustard seeds,cumin,add chopped garlic,onions and green chillies,saute them for a minute.
Now add curry leaves,turmeric powder, chopped amaranthus leaves and salt.cover with lid cook on very low flame for about three minutes,remove lid add coriander powder and cook for two more minutes or till the water is evaporated and completely dry.
Serve with rice or roti(Indian bread).

Thotakura (amaranthus)-1 bunch(2cups of chopped leaves).Garlic cloves -6 to 8.

Preparation:
Clean and wash amaranthus leaves with water,cut finely with stems,cut onions,garlic cloves and green chillies finely.Make tempering oil,mustard seeds,cumin,add chopped garlic,onions and green chillies,saute them for a minute.
Now add curry leaves,turmeric powder, chopped amaranthus leaves and salt.cover with lid cook on very low flame for about three minutes,remove lid add coriander powder and cook for two more minutes or till the water is evaporated and completely dry.
