Aloo pudina paratha(Potato and fresh mint paratha)
Tasty paratha with fresh mint and potatoes,served with yogurt.

Ingredients:
2 boiled potatoes(medium)
2 cups of wheat flour.
1/2 inch fresh ginger.
3 to 4 green chillies.
1/2 cup fresh mint leaves.
1/2 teaspoon cumin.
1 tablespoon lemon juice.
1/2 teaspoon salt.
3 tablespoons oil.
Preparation:
Add oil and salt to the enough water to the flour make soft dough.Cover it and leave it for 5 minutes.
Remove the skin of boiled potatoes,mash them.
Blend together green chillies ,cumin,chopped mint leaves,chopped ginger and salt to make the paste.Mix this paste with mashed potatoes,add lemon juice and prepare stuffing for paratha.
Make equal size balls out it.
Now take lemon sized dough,apply a little oil to it,using press with hands , now keep the stuffing mix at the centre,cover it with dough by folding.
Press it with puri press or roll gently with rolling pin.
Heat a flat pan(tava pan),fry it on both sides,apply little oil, till its lightly pink and crispy .
Serve hot with yogurt.
