Christmas fruit cake

Christmas fruit cakeIngredients: |
1cup of plain flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
Wet mix:
1.5 cups -Dry fruit mix(raisins,sultana,currants,prunes,dried cranberries,dried papaya cubes,dates, cashew nuts,walnuts)
1 cups of fresh orange juice.
1 cups mixed berry juice
3/4 cup of butter
1 cup sugar
1 tablespoon orange rind.
Other ingredients:
4 eggs.
How to make:
Grease the cake tin or place the baking sheet n a round baking tin.
Preheat oven to 140degree temperature.
Take a pan and place all the wet mix ingredients and boil on low flame for about 15 to 20 minutes,until butter has melted and sugar dissolves completely.
Switch of the flame and allow it cool completely.
Sieve the dry ingredients in a large bowl,stir in eggs and wet mix ,mix thoroughly.
Spoon in cake batter into prepared tin and tap to get rid of air bubble.
Place a baking sheet on the cake mix,making hole in the middle.
Place the tin on the middle rack in oven and bake it for an hour at 140 degree temperature,check inserting knife,
If knife comes out clean ,cake is done.
Remove from oven and cool it completely.
