Colourful Baby corn-Paneer-Zucchini stir fry with bell peppers
Quick,colourful and healthy stir fry loaded with antioxidants and vitamins ,with leftover fresh veggies in your refrigerator added with paneer(Indian cottage cheese) cooked on a medium to high flame. Ingredients:
Baby corn-6,cut them into small slices.
Paneer cubes-1/2 cup
Zucchini-1medium cut in to half inch length.
Orange bell peppers-1 cut them in half inch.
Paneer cubes-1/2 cup
Zucchini-1medium cut in to half inch length.
Orange bell peppers-1 cut them in half inch.
Green chilly-3 or 4 cut into 3pieces.
Onion-1(cut into wedges).
Garlic cloves-2(finely chopped).
Salt-1/2 teaspoon.
Chilly sauce-1 teaspoon.
Chat masala-1 teaspoon.
Canola oil -1/2 teaspoon for cooking.
Preparation:
Heat a pan on medium to high flame ,add oil.
Add finely chopped garlic,onions saute for a minute.
Add zucchini,baby corn cook for another minute.
Now add paneer cubes,allow them to turn golden colour,stir continuously.
Add salt, green chillies, and orange bell peppers,red chilly sauce ,chat masala powder.
Cook until vegetables are slightly crisp.Serve hot.
