Tomato rasam
Tomato rasam is simple,tasty and easy rasam of Telangana style of cooking with lots of flavours of fresh curry leaves and coriander.
Ingredients:
Tomatoes -3 medium.
Green chillies-5 to 6.
Onion-1 small.
Garlic cloves(crushed)-5 to 6.
Turmeric powder-1/2 teaspoon.
Coriander powder-1/2 teaspoon.
Jeera methi powder(Roasted cumin,fenugreek powder)-1/2 teaspoon.
Pepper corns-3/4 teaspoon.
Cumin(jeera)-1/2 teaspoon.
Mustard(avalu)-1/2 teaspoon.
Dry red chillies-1.
Curry leaves-10 to 15.
Chopped fresh coriander-1/2 teaspoon.
Canola oil for cooking-1/2 tablespoon.
Salt to taste or about 3/4 teaspoon.
Preparation:
Wash and pressure cook tomatoes adding 1 cup of water up to 3 whistles.
Allow it cool.
Extract juice by adding 3 cups of water.
Now place a pan heat it and add oil.
Add add cumin,mustard,dry red chilly, ppepper corns, let it turn brown,crushed garlic,fry till its colour starts changing, now add curry leaves, onions and green chillies,cook for half a minute.
Add turmeric powder,tomato extract ,roasted fenugreek powder,coriander powder,salt.
Allow it to boil till it reduces to 1/4 or till the onions r cooked.
Switch of the flame and chopped fresh coriander leaves.
