Moutabel is a Middle eastern dip(Its similar to Vankaya Pachhadi) made with Eggplant.Egg plant is roasted to make this recipe.

Ingredients:

 Eggplant /Aubergine-1 big.
Tahini sauce-2 tablespoons.
Pepper powder-1/2 tablespoon.
Crushed garlic clove-1.
salt-1/4 teaspoon.
Sumac powder-1/4 teaspoon.
Lemon Juice-1
Olives and parsley leaves for dressing.

Preparation:

Roast or grill Egg plant for ten to fifteen minutes,turning all the sides to cook in side till gets folds on the upper layer on medium fire.
Allow it to cool down completely.
Remove skin and seeds.
Take the pulp in a bowl and mash it.
Now add Tahni Sauce,pepper,crushed garlic and lime juice to Egg plant  pulp and grind it to a smooth paste.
Take this Moutabel in a serving bowl,add a dash of olive oil and sumac powder,some olives and fresh parsley.
It can be served with any bread and kebab combination.
