Phirni is delicious creamy dessert made with basmati rice and milk,some saffron.Navratri special dessert.

Ingredients:

Kesar Phirni

Fresh milk -2 cups.
Condensed milk-1 small tin.
Basmati rice- 1tablespoon.
sugar-2 tablespoons.
Saffron-4 to 5 strands.
For the garnish:
Few almonds chopped.

Preparation:

Wash and soak basmati rice for 20 to 30 minutes.
Boil milk in a thick bottomed pan.
Mean while remove excess water from rice and make paste coarsely in a blender.
Add this rice paste to boiling milk,stirring continuously.Make sure it should not from lumps.

Kesar Phirni

Cook for 10 minutes.Add sugar,condensed milk and saffron,cook for 3 more minutes.
Check it is half done.


Kesar Phirni

Allow it cool.
Refrigerate for at least an hour,garnish with chopped almonds and serve chilled.
