Ingredients:
- Basmati Rice-250 grams.
- Saffron-5 to 6 strands.
- Cashew nuts-5 to 6.
- Cranberries(dried) -1 tablespoon.
- Salt-1teaspoon.
- Ghee(clarified butter)-1 tablespoon.
Procedure:
Clean and wash Basmati rice thoroughly twice or thrice,and soak in water.
Add saffron to 5 tablespoons of water.
Soak cranberries in water.

Boil 3 cups of water,add 1/2 table spoon of ghee and salt.Add rice and cook rice approximately 10 minutes or check the rice 3/4 cooked.
Drain rice in colander,

Take a pan add remaining ghee,fry cashew nuts and Cranberries with low flame.
Remove them and keep them aside,add the drained rice to ghee spread it evenly,pour saffron concentrate,cover it with lid and cook for 5 minutes in low flame.
Place saffron rice in serving bowl and dress with fried cashew and cranberries.
