Brinjal Methi Fry(Eggplant with Fenugreek leaves)

Ingridients:

Brinjal-500 grams.
Green chillies chopped- 1 table spoon.
Onions-1(about half cup chopped).
Turmeric-1 teaspoon.
Kasuri Methi(dry Fengreekleaves)- 2 tablespoon.
Ginger garlic paste-1 teaspoon.
Curry leaves-5 to 10 leaves.
Salt - 1 teaspoon.
Oil - 1 tablespoon.
Cumin-1 teaspoon.
Mustard seeds -1teaspoon.

 Masala powder: for brinjal - 2 tea spoon.
Corriander powder-1 teaspoon.
Seasame seed powder-1 teaspoon.
Brinjal Methi Fry(Eggplant with Fenugreek leaves)

 Masala powder for brinjal recipe:

Roast groundnuts 1 table spoon,chanadal 1 tablespoon and dry red chillies 3 make powder.

Procedure:

  1. Cut brinjal in long thin slice,and soak in salt water for 2 to 3 minutes and remove.
  2. Add oil in a saute pan,heat it.Add cumin,mustard,cut onions,curry leaves,green chillies,kasuri methi.
  3. Ginger garlic paste,turmeric saute.
  4. Add brinjal and saute for 3 to 4 minutes.
  5. Add salt,corriander powder,curry powder and cover it and cook for 10  minutes on slow fire.
  6. Check brinjal is soft and serve.
