Ingredients:
1 cup of sliced and cooked beetroot
1 table spoon freshly grated coconut
1 tablespoons chopped green chillies
5 to 10 fresh curry leaves.
1/2 teaspoon chopped garlic.
Tempering Ingredients:
2 dry red chillies
1/4 teaspoon mustard seeds
1/4 teaspoon cumin
1/4 teaspoon urad dal
1/4 teaspoon chana dal
1/2 teaspoon cooking oil
1 tablespoon lemon juice
1/2 teaspoon salt (or according to taste)
Preparation:
Heat oil in a pan.
Add tempering ingredients,when they start splutter add garlic ,curry leaves,green chillies.
Now add beetroot pieces and salt,mix well .
Cover it and cook for five minutes,switch of the flame.
Add lemon juice and grated coconut,mix and serve.
Beetroot stir fry,served with rice,pappu charu , potato stir fry and buttermilk. |
