Soya nuggets with Cucumber
Ingredients:
Cucumber -1 medium.Tomatoes -3 medium.
Onion-1 medium.
Soya nuggets-1 cup.
Curry leaves-10 to 12.
Coriander powder-1/2 tablespoon.
Chilly powder-1/2 tablespoon.
Turmeric powder-1 teaspoon.
Ginger garlic paste-1 teaspoon.
Canola oil-1 tablespoon.
Mustard seeds-1/2 teaspoon.
Cumin-1/2 teaspoon.
Split black lentil(urad dal)-1/2 teaspoon.
Dry red chillies -2 or3.
Salt to taste or 3/4 teaspoon.
How to prepare soya nuggets for cooking:
Boil water add salt,add soya nuggets cover it with lid,allow to soak for 5 to 10 minutes.
Squeeze soya nuggets gently and remove all the water.
Peel the skin and remove seeds of cucumber,check the taste of cucumber,it should be sour or sweet.
Cut into 1/2 inch cubes.
Heat 1 table spoon of canola oil in a pan,
Add cumin,mustard,split black gram(urad dal),when they turn light brown.
Add sliced onions,curry leaves saute for a minute.
Add ginger garlic paste,turmeric powder,chilly powder and salt.
fry it for half a second or till the ginger garlic aroma come out.
Curry preparation:
Slice onions and tomatoes.Peel the skin and remove seeds of cucumber,check the taste of cucumber,it should be sour or sweet.
Cut into 1/2 inch cubes.

Add sliced cucumber and tomatoes,mix well and cover it.
Cook for 2 minutes and add 2 cups of water.
Cook for 8 to 10 minutes or till the cucumbers are soft and gravy thickens.
Add coriander powder and switch off the flame.
Serve it.Can be served with boiled rice or any bread.
