Mixed Vegetable Pickle |
Ingredients:
I took vegetables mix about 2 and 1/2 cups.
1 cup-Carrots.1 cup-Raw mangoes.
1/2 cup -Amla(gooseberries)
Fresh ginger-2 tablespoons.(long thin sliced)
French beans-1/2 a cup(1/2 inch cut in length wise)
Green chillies-10 to 15(slit length wise).
For making Pickle:
Mustard oil-1 and 1/2 cup.Mustard seeds-1 tablespoons.
Roasted Methi seeds(Fenugreek seeds)-1 tablespoon.
Fennel seeds-1/2 tablespoon.
Roasted sesame seeds-1cup.
Turmeric powder -1 tablespoon.
Salt -2 tablespoons.
Lemon juice-1 cup.
Wash and wipe all the water,cut into pieces ,dry them for 5 to 6 hours .
Make powders of roasted fenugreek,mustard, roasted sesame seeds.
Take mustard oil in a large bowl,add fenugreek powder,mustard powder,sesame powder,fennel seeds,turmeric powder and salt.
Mix thoroughly.
Now add mixed vegetables and mix well.
Finally add lemon juice and mix.
Transfer this into a clean and dry glass jar or any pickle jar, leave some space, do not fill completely.
Close the the lid,pickle will be ready to serve after 3 to 5 days.
Can be preserved up to 6 months, if kept in a dry and cool place.
