Vangi baath(Brinjal rice)

Spicy brinjal rice.

Ingredients:

Cooked rice -2cups
Brinjal - 6 to 7
Tamarind -1/2 a small lemon size.
Salt to taste

For vangibhaat powder:

Dry red chillies-3 to 4.
Chana dal(bengal gram)-1 table spoon.
Cumin seeds-1 teaspoon
Peanuts-2 tablespoons.
Sesame seeds- 1tablespoon.
Oil-1/2 teaspoon.

For seasoning:

Mustard seeds-1 teaspoon.
Cumin seeds-1 teaspoon
Urad dal-1 teaspoon
Chana dal-1 teaspoon.
Peanuts-1 teaspoon.
Greenchillies-2
Curry leaves-10 to 15.
Turmeric powder-1 teaspoon.
Asafoetida/hing-1/4 teaspoon.

Preparation:

1.Method to prepare vangi baath powder:

Heat 1/2 teaspoon oil, add all ingredients except coconut and roast on
a low heat till golden colour .Now add grated coconut,fry it  for a minute.
Allow these ingredients to cool down.
Blend into a fine powder.

Vangi bath rice preparation:

Spread cooked rice on  plate keep it ready.
Wash and soak tamarind in half cup of water and extract the pulp and keep a side.
Wash and cut brinjals 1/2 inch size and soak them in salt water.

Now drain all the water from brinjal.
Heat a tablespoon of oil in a pan,add curry leaves,brinjal and saute for a minute,add salt and tamarind pulp and mix well.
Cover it and cook on very low flame for 5 to 8 minutes or till done.
Now add  two teaspoons of vaangi baath powder,mix well ,cook for a minute.

Vangibaath/Brinjal rice

Add cooked rice and mix well.
Cover it and cook for 3 to 4 minutes.
Make seasoning by heat a teaspoon of oil and add all the seasoning ingridients-mustard seeds,cumin seeds, Urad dal, Chana dal,
Peanuts,Curry leaves saute till golden colour,add turmeric powder,
asafoetida/hing.

Vangibaath/Brinjal rice
Add this seasoning to rice,mix well serve it with yogurt or raita.
