Ingredients:

Thick Poha / Rice flakes-1 cup.
Potatoes-1.
Onion-1 medium.
Green chillies-2
Dry red chilly-1.
Curry leaves-10.
Groundnuts-1 tablespoon.
Puffed chickpeas-1 tablespoon.
Mustard seeds-1/2 teaspoon.
Cumin-1/2 teaspoon.
Salt-1/2 teaspoon.
Chilly powder-1/2 teaspoon.
Turmeric powder-1/4 teaspoon.
Oil for cooking -2 teaspoons.

Preparation:

Place poha/ beaten rice flakes in a colander,pour water on it to moisten,strain excess water and keep aside.
Peel and cut potatoes into small cubes.
Heat 1/2 teaspoon of oil and add potatoes and fry with 1/4 teaspoon of salt,chilly powder on low to medium flame till golden brown in a non-stick pan.

Heat oil in a pan,add cumin,mustard seeds.
Add onions and saute for 2 minutes on medium flame.
Add sliced green chillies, puffed chickpeas,ground nuts fry them for a minute.

Add  turmeric powder, drained poha and salt.Mix well .
Aloo Poha

Cook on medium flame for 2 to 3 minutes,add fried potatoes.mix.

Serve hot with a splash of lemon juice
