Hyderabadi  handi veg-dum biryani.
Veg dum biryani is a popular vegetarian dish, less spicy with a lot of flavour  and vegetables .Cooked slowly and covered air tight, each grain will look separately, using a special vessel  with narrow neck, flat at the bottom called Handi.

Ingredients for Rice preparation:

  1. Basmati rice-2 cups(500 grams)
  2. Star anise-1
  3. Cinnamon stick-2
  4. bay leaves-2
  5. Javitri(mace)- 3 to 4 strands.
  6. Cloves-3
  7. cardamom-2
  8. Pepper corns-1/2 teaspoon(10 corns)
  9. Salt-1/2 teaspoon.
  10. Water-5 cups.

Ingredients for vegetable preparation:

  1. Mixed fresh vegetables(fresh carrots,green peas,french beans,cauliflower)-200 grams(all in equal quantities).
  2. Onion-1 (cut in to small pieces)
  3. Green chillies-3(slit)
  4. Ginger garlic paste-1/2 teaspoon.
  5. Mint leaves -2 table spoons.
  6. Garam masala-1 teaspoon.
  7. coriander powder-1 tablespoon.
  8. Shajeera(caraway)-1/2 teaspoon.
  9. Turmeric powder-1/2 teaspoon.
  10. Salt-1 teaspoon.
  11. Chilly powder-1/2 teaspoon.
  12. Curd(yogurt)-1 cup.
  13. Saffron-4 to 5 strands soaked in 3 table spoons of water.

Preparation for Rice:

Boil 5 cups of water,add spices Basmati rice-2 cups(500 grams),Star anise,Cinnamon stick,bay leaves,Javitri(mace)-,Cloves,cardamom,Pepper corns,Salt.Boil for 8 to 10 minutes,check the rice to cook 3/4.Drain  all the water in a colander.

Preparation for vegetable curry:

Add 1 table spoon of canola oil in saute pan heat it.Add caraway(shajeera),onions,let turn pink,add green chillies,ginger garlic paste,mix well.
Now add cleaned and washed mixed vegetables.

 Add mint leaves,turmeric powder,salt,chilly powder,garam masala powder,coriander powder,add yogurt(curd),saute for 2 minutes,add half cup of water allow to cook for another 2 minutes.

 Now take Handi(cooking utensil) layer half of the boiled rice,spread the layer of vegetables layer.
On top layer spread remaining rice,add saffron water.

 Heat a thick tawa,place the Handi on tawa,cover it with wet towel and close it with a tight lid.
Cook on low flame for 30 minutes.

Serve this one pot meal with ,browned onions and Dahi chutney(carrot onion raita)or desired.
